Delta Air Lines is redefining the meaning of pre-select meals to give customers more control of their inflight experience. Executive Chef Christian Hallowell talks us through the challenges of exceeding expectations while he creates some of his stunning pre-order menus for us all to sample. Introduced by Dr Stathis Kefallonitis.

The session will look into ways that big data, biometrics and behavioural patterns affect pre-order meals.
Decision-making metrics, as well as scientific data, will be used to highlight predictive techniques towards pre-select meal offerings. 
Dish design, signature menu items, the language of menus, as well as quality and expectations will be highlighted by Chef Christian Hallowell.
Menu innovation trends, linguistics, semiotics and biometrics/neuroscience methods will be introduced by Dr Stathis Kefallonitis. The importance of sensory experience taste/smell and visual representation will be explained.
