Marc and his business partner Adrian are the owners of Niche, a multi award winning gluten-free restaurant in London. Marc was Culinary Director for Alpha LSG Sky Chefs for the UK 2014-2018. Marc owns Niche Free-from Kitchen specialising in special dietary meals and dietetic strategies for the healthcare, retail, and travel industry. Our airline and travel business is Libero Special Meals, NOOT is our healthcare brand and Bare Food and Cub Food (kids) brands for premium retail with some of the snacks available in the travel sector, all the brands are free-from. Since 2014 Marc has written for OnBoard Hospitality Magazine on food insights, trends, free from and the travel sector in general. In 2019 just in time for lockdown, wanting to progress his knowledge further he embarked on his MSC in Food Science. Diagnosed with Coeliac Disease in 2014 Marc has been on a mission to improve special meals and promoting truly safe food for allergy sufferers in the airline and travel industry and in 2022 has set up the Allied Airlines Special Meals Initiative, research and strategy for airlines and the travel industry wanting to update and improve special meals provision, making travel safer for those with food allergies.
