Chef: Steve Walpole, consultant chef working with Royal Smilde and head of food at Ugo Foods (formerly of Gate Gourmet) gets creative in the kitchen using ‘on trend’ ingredients and techniques. 

Moderator: Marc Warde, chef, coeliac and owner of London’s first gluten-free restaurant, Niche. Marc as also has a free-from ready meals production kitchen and consults for the airline and hospitality sectors.
